Peach Cobbler

Ingredients

1 tablespoon Butter, Salted
1/8 cups Corn Starch
1 tablespoons Light Brown Sugar
2/3 cups Evaporated Milk, nonfat

1 cups, poured from box Pancake mix
1 cups Peach nectar, canned, without added ascorbic acid
1 quarts, 2 cups Peaches, yellow, raw
1/4 cups Pineapple juice, canned or bottled, unsweetened, without added ascorbic acid
2/3 teaspoons Cinnamon
2/3 teaspoons Nutmeg
1/2 cups Sugar
1 tablespoon Vanilla extract
2/3 cups Flour, white

Steps

1 Combine cinnamon, vanilla, cornstarch, peach nectar and pineapple juice in a saucepan over medium heat. Stir until mixture thickens and bubbles.
2 Add sliced peaches and reduce heat and simmer for 5–10 minutes.
3 In another saucepan, melt margarine and set aside.
4 Lightly spray an 8-inch-square glass dish with cooking oil spray. Pour hot peach mixture into dish.
5 In another bowl, combine pancake mix, flour, sugar and melted marga¬rine, then stir in milk.
6 Spoon mixture over peach mixture.
7 Combine nutmeg and brown sugar in a small bowl or cup, then sprinkle on top of batter.
8 Bake at 400 degrees F. for 15–20 minutes or until golden brown.
9 Allow to cool and cut into eight squares.
