Loaded Potato Soup

Ingredients

Amount Ingredient
1/4 cups Cheddar Cheese
1/4 cups Sour Cream, Reduced Fat
2 cups Milk, lowfat 1%
2 teaspoons Olive Oil
1/2 cups, chopped Onion
2 1/3 teaspoons Green Onions
3 slice Bacon, pre-sliced, cooked
, Baked Potatoes, red,
2/3 teaspoons Salt
1 1/4 cups Chicken Broth, low sodium
, ground Pepper
1/4 cups Flour, white

Steps

1 Pierce potatoes with a fork and microwave on high for 10 minutes or until tender.
2 Cut each potato in half and allow them to cool off.
3 Heat olive oil in a saucepan over medium-high heat, then add chopped onion and sauté for 3 minutes.
4 Add chicken broth to onion mix and stir.
5 Add the flour and 1/2 cup milk into mix and stir. Bring to a boil then stir for 1 minute.
6 Remove saucepan from heat, then stir in sour cream, salt, and pepper.
7 Fry bacon on skillet till crispy then place bacon on a paper towel covered plate.
8 Allow bacon to cool then crumble bacon.
9 Coarsely mash potatoes (with or without skin) into soup.
10 Top with cheese, green onions, bacon and serve.
