Korean Chicken Rice Bowl

Ingredients

1 cups Kimchi
2 1/4 cups Chicken Breast, raw
1/8 cups Gochujang, Fermented Chile Paste
1 quarts, loosely packed Baby Kale
, about , Cooking Spray
1 tablespoons Sesame Oil
1 stalk Green Onions
1 cups Brown Rice, raw
0.25 tsp Salt
1 tablespoon Sesame Seeds, whole, roasted
1 tablespoon Soy Sauce

Steps

1 Wash and rinse rice and cook on stove top or in rice cooker according to instructions on package. About 40 - 45 minutes for brown rice.
2 While rice cooks, combine 1 tbsp soy sauce, 1 tbsp gochujang and 1 tsp sesame oil in a medium bowl and mix.
3 Brush or pour mixture over each piece of chicken, covering both sides. Set aside and allow juices to settle in.
4 In a large pot or skillet, place baby kale in 2 cups of water and heat for about 10 minutes or until kale is tender.
5 Drain and rinse kale with cold water until cooled off.
6 Grab small handfuls of the kale and squeeze out as much liquid from the kale, then place all the kale in a medium bowl and fluff apart.
7 Add half of the chopped green onion, salt, 2 tsp sesame oil and sesame seeds to kale and mix thoroughly.
8 Heat a large, nonstick frying pan over medium-high heat then coat with cooking spray and place chicken in the pan.
9 Place the chicken in pan and cook for about 5 minutes or until browned. Cook both sides of each chicken piece until brown and cooked through, about 5 more minutes.
10 Move chicken to a cutting board and allow it to cool for at least 5 minutes.
11 When rice is done, fluff rice with rice paddle or fork, then scoop out rice into 4 bowls.
12 Top each bowl with the kale mixture and kimchi.
13 Slice chicken and add to bowls.
14 Garnish each bowl with remaining green onion and serve with additional gochujang if desired.
