Cranberry Turkey

Ingredients

1/8 cups Water
1/2 cups Carrots, Raw
1 1/2 cups, chopped Cranberries, Raw
2 teaspoons Arrowroot Powder
1/2 cups Orange juice
0.125 tsp Cloves, ground
1/8 cups Sugar
1 breast Turkey Breast

Steps

1 Preheat oven to 325 degrees F.
2 Place turkey breast in a roasting pan and cover loosely with aluminum foil.
3 Roast for 2 ½ hours or until the internal temperature reaches 165 degrees F.
4 Remove foil in in the last 30 minutes of cook time to develop a nice color.
5 Allow turkey to sit for 10-15 minutes.
6 In a saucepan add cranberries, orange juice, carrots, sugar and cloves and bring to a boil.
7 Reduce to simmer for about 4 more minutes.
8 In a small bowl combine arrowroot powder and water, then stir into the cranberry sauce to thicken and simmer for an additional minute.
9 Pour sauce over turkey breast, slice and serve.
