Chicken Piccata

Ingredients

Amount Ingredient
1/2 cups White Wine
1 tablespoon, drained Capers, Canned
3 cups Chicken Breast, raw
2 lemon yields Lemon juice
1 teaspoons Olive Oil
1 teaspoons Salt
1 teaspoons, ground Pepper

Steps

1 Pound each chicken breast flat.
2 Sprinkle both sides of each chicken breast with salt and pepper.
3 Add oil in a large saucepan over medium heat.
4 Add chicken and brown on both sides. Transfer to a plate and cover with foil.
5 Add white wine to the saucepan. Stir and scrape the bottom of the pan.
6 Reduce wine by half.
7 Return chicken to the pan. Ensure chicken is coated with wine.
8 Add capers and lemon juice. Bring to a boil. Season with a little more salt and pepper.
9 Plate chicken. Pour sauce on top (chicken should have an internal temperature of 165 degrees F).
10 Serve.
