Chicken Clemenceau

Ingredients

1/2 cups White Wine
1/8 cups Butter
1 1/2 cups Chicken Breast
2 clove Garlic clove
2 lemon yields Lemon juice
1 cups, piece or slice Mushrooms, white, raw
, about , Cooking Spray
5 stalk Green Onions
, Peas, canned
, Potato
1 teaspoons Salt
1 teaspoons, ground Pepper

Steps

1 Preheat oven to 400 F.
2 Coat diced potatoes with cooking spray, place in baking dish and bake until soft, (about 15 minutes).
3 Season chicken with salt and pepper.
4 Spray large pan with cooking spray and fry chicken until golden brown then remove and put onto a plate.
5 In the same pan, sauté mushrooms and garlic for 5 minutes. Add peas, wine and juice of 2 lemons to mixture.
6 Place chicken back into the pan and reduce liquid by half and simmer about 15 minutes and mix in butter until sauce is creamy.
7 Serve on a platter then add cooked potatoes.
8 Spoon sauce over potatoes and top with chopped green onions.
