Baked Strawberry Rhubarb Oatmeal

Ingredients

2 cups, sliced Strawberries
1 cups, diced Rhubarb
1/4 cups Pure Maple Syrup
3/4 cups Almond Milk, Unsweetened
1 large Egg
1 1/2 cups Old Fashioned Oats, Organic
2 teaspoons Cinnamon
1/3 cups, chopped Pecans

Steps

1 Preheat the oven to 375.
2 Place strawberries, rhubarb, and 1 1/2 tbsp. of the maple syrup in a mixing bowl. Toss well and spread across the bottom of a lightly greased square baking pan (8 x 8 is ideal).
3 In another mixing bowl, whisk together the milk, egg, and 1 1/2 tbsp. of maple syrup. Stir in the oats and cinnamon. Stir until well mixed.
4 Pour the oat mixture evenly across the strawberry and rhubarb into the pan.
5 Sprinkle chopped pecans across the top and bake in the oven for 40 minutes. Enjoy while it's hot!
