Curried Lentil, Kale & Broccoli Salad

Ingredients

Amount Ingredient
1/8 cups Olive Oil, Extra Virgin
0.5 large Onion, finely chopped
3 cloves Garlic clove
1 tablespoon Ginger, grated
1 tablespoon Curry Powder
1 quarts Broccoli, Flower Clusters
2 quarts, loosely packed Kale leaves, chopped
1/8 cups Water
2 cups Green Lentils, cooked
0.5 lemon yields Lemon juice, from half a lemon
4 large Eggs
0.25 tsp Sea Salt, Fine
, ground Pepper

Steps

1 Heat 1 tbsp. of the olive oil in a large skillet over medium heat.
2 Add the onion and saute until translucent (about 5 minutes).
3 Add the garlic, ginger and curry powder and saute for another minute.
4 Add the broccoli and water. Saute until bright green (about 5 -8 minutes).
5 Add the kale and the lentils. Stir just until wilted then remove from heat.
6 Stir in lemon juice and season with sea salt and pepper to taste.
7 Taste and add more curry powder, sea salt and pepper if you desire.
8 Heat a frying pan over medium heat. Add 1 tbsp. of olive oil and brush around the pan for non-stick.
9 Fry eggs (one or two at a time gives the best results) and season with a bit of sea salt and pepper.
10 Ladle salad into bow's and top with a fried egg. Enjoy it while it's hot!

If you have broccolini (a variant of broccoli), you can use that.
More protein? Serve with quinoa.
More carbs? Serve with brown rice.
No Eggs? Top with protein of choice.
