A Touch Of The Tropics Rice Bowl

, Sweet potato, diced
1 tablespoon Olive Oil, Extra Virgin
2 cups Jasmine Rice, Cooked
1 fruit Pineapple, peeled, cored and diced
1/4 cups Cashews, Raw
1/4 cups Hempseed, Raw, Shelled
Sweet & Sour Sauce
1 tablespoon Cornstarch
1/2 cups, chunks Pineapple, chunks
1/4 cups Rice Vinegar
1/3 cups Light Brown Sugar
1/4 cups Ketchup
2 teaspoons Soy Sauce

Steps

1 SWEET POTATO: Preheat the oven to 425ºF.
2 Toss the sweet potato with the oil. Place on a baking sheet and roast for 30 minutes. Remove from the oven and let cool.
3 SWEET AND SOUR SAUCE: Whisk together cornstarch and 1 tbsp water in a small bowl. Set aside.
4 Add the pineapple and ¼ cup water to a blender. Blend until the mixture is as smooth as possible.
5 Add the pineapple mixture, rice vinegar, brown sugar, ketchup, and soy sauce to a medium saucepan. Bring to a boil over medium-high heat.
6 Stir in the cornstarch mixture and cook until thickened, about a minute. Remove from the heat and set aside while assembling bowls.
7 ASSEMBLY: Place rice in the bottom of each bowl. Add rows of pineapple, cashews, hempseed, and sweet potato.
8 Top with the sweet and sour sauce.

Want to make this recipe gluten-free? Use tamari instead of soy sauce.
