Panang Seitan Curry

Ingredients

1 cups Red Quinoa
, Sweet potato, diced
1 tablespoon Olive Oil, Extra Virgin

1/4 cups Organic Shallots, finely chopped
2 clove Garlic clove, minced
1/4 cups Peanut Butter, Natural, Creamy
1/8 cups Red Curry Paste
1 teaspoons Sriracha
2 teaspoons Ground Turmeric
1 teaspoons Spices, ginger, ground
1 teaspoons Cumin, Ground
1 3/4 cups Coconut Cream, 1 - 14 oz. can
1 teaspoons Lime juice, raw
2/3 teaspoons Salt
2 cups Seitan Cubes

Steps

1 Place the quinoa in a sieve and rinse well. Place the quinoa in a medium saucepan and cover with 2 cups water.
2 Bring to a boil and then turn the heat down and cover. Simmer for about 15 to 20 minutes or until all the water is absorbed and quinoa is tender. Set aside, covered.
3 Add water to a medium saucepan with a steamer insert and bring to a boil.
4 Add sweet potato to the insert and steam over boiling water for 10 minutes.
5 Heat the oil in a large skillet over medium heat. Add the bell pepper and sauté for 10 minutes.
6 Add the shallots and garlic and cook for 2 minutes.
7 Stir in the peanut butter, red curry paste, sriracha, turmeric, ginger, and cumin. Cook for 5 minutes, stirring occasionally.
8 Stir in 1 cup water, the coconut cream, lime juice, and salt.
9 Add the sweet potato and seitan nuggets. Stir and turn heat to medium high.
10 Bring to a low boil, turn down the heat to a simmer, and cover.
11 Cook for 10 to 15 minutes.
12 Serve with quinoa.
