Bacon Cheeseburger Casserole

Ingredients

2 cups Ground Beef, 93% Lean
3 pan-fried slices Bacon
1/2 cups Almond Flour
3 cups Riced Cauliflower
2/3 teaspoons Garlic Powder
2/3 teaspoons Onion Powder
1/8 cups Tomato Ketchup, Reduced Sugar
1 tablespoon Dijon Mustard
1 tablespoon Mayonnaise, Real Mayo
3 large Eggs
1/2 cups Cheddar Cheese, (2 oz. inside, 2 oz. on top)
0.25 tsp Salt
, ground Pepper

Steps

1 Pre-heat oven to 350F.
2 Rice cauliflower in food processor. Add dry ingredients and mix.
3 Process bacon and ground beef in food processor until crumbly and slightly pasty.
4 Cook over medium-high, seasoning with salt and pepper to taste.
5 Shred the cheese while meat is cooking.
6 Once the meat is done, combine all ingredients in a large bowl and add 2 oz. (half) of the cheddar cheese.
7 Add eggs, mayo, ketchup, and mustard to the mixture. Using a fork or your hands, mix everything together well.
8 Press mixture into a 9×9 baking pan lined with parchment paper. Then, top with 2 oz. (the other half) of the cheddar cheese.
9 Place on top rack and bake for 25-30 minutes. For additional crisp on top, broil 2-3 minutes or until browned.
10 Remove from oven and let cool for 5-10 minutes.
11 Slice, and serve with additional toppings. Ideas: mustard, extra reduced sugar ketchup, and pickles.
