Ingredients

2 second spray Olive Oil Cooking Spray
0.25 tsp Smoked Paprika
3 cups Water
1 1/2 cups Organic Buckwheat Groats
3 cups Spinach, chopped
2 can drained solids Kidney Beans, Canned, Drained
, Cucumber, Peeled
, ns as to florida or california Avocado, sliced
1/8 cups Relish of choice
1/8 cups Avocado Ranch Dressing
3/8 cups Roasted Pepitas

Steps

1 Preheat the oven to 425°F.
2 Line a baking sheet with parchment paper or a silicone baking mat.
3 Spread out the sweet potato cubes on the pan and spray with olive oil.
4 Add the paprika, salt, and pepper and toss to coat.
5 Bake for 30 minutes, or until tender and browned, tossing once halfway through to ensure even cooking.
6 Set aside to cool.
7 While the sweet potatoes are cooking, cook the buckwheat groats: Bring the water to a boil in a medium pot. Add the buckwheat groats and return to a boil.
8 Reduce the heat, cover, and simmer until most of the water has been absorbed, 11 to 12 minutes.
9 Remove from the heat and add salt.
10 To serve, fill each bowl with spinach, buckwheat groats, beans, sweet potato, cucumber, avocado, and cabbage relish.
11 Drizzle with dressing and top with toasted pepitas.
12 If desired, you can add salt and black pepper to taste.
