Chinese Chickpea Salad

Chickpea Salad
1 tablespoon Sesame Oil
3 3/4 cups Chickpeas, 2 - 15 oz cans
1/4 cups Tamari, Gluten Free
1 quarts Napa Cabbage
1 cups, shredded Cabbage, Red, Raw
1 cups Carrots, Raw
1 cups Sliced Almonds, Toasted
1/2 cups Green Onions, sliced
8 crackers Rice Crackers, crumbled
1 1/4 cups Tangerines, (mandarin oranges), canned, juice pack, drained
1 cups Water Chestnuts, sliced in half
Miso Ginger Dressing
1/2 cups Rice Vinegar
1/8 cups Sesame Oil
1/8 cups Pure Maple Syrup
2 teaspoons Ginger, freshly grated
1 tablespoon White Soy Miso

Steps

1 SALAD: Heat the sesame oil in a large shallow saucepan over medium heat.
2 Add the chickpeas and cook for a couple of minutes.
3 Add the tamari and cook, stirring occasionally, until the liquid has been absorbed.
4 Set aside to cool for about 5 minutes.
5 DRESSING: Stir together all the ingredients in a cup or small bowl.
6 Combine the napa cabbage, red cabbage, carrots, almonds, green onions, mandarin oranges, and water chestnuts in a large bowl.
7 Add the chickpeas and dressing and toss until fully combined.
8 Serve immediately, topped with crumbled rice crackers.
