Potato Leek Soup

Ingredients

1 teaspoons Olive Oil
1 clove Garlic clove
2 leek Leeks, (bulb and lower leaf-portion), raw
3 potato Yukon Gold Potatoes
2 teaspoons Rosemary, dried
2 teaspoons, ground Thyme, dried
1 teaspoons Sage, ground
3 cups Vegetable Broth, Organic, Low Sodium
2 cups Water
1 tablespoon Nutritional Yeast (optional)
1 tablespoon Lemon juice
1 teaspoons Liquid Smoke
1 dash Salt
1 dash Pepper

Steps

1 In a large pot, heat the olive oil over medium heat.
2 Add the leeks and sauté until soft, about 4 minutes.
3 Add the garlic and sauté for another minute.
4 Add the potatoes, rosemary, thyme, sage, broth, and water. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
5 Turn off the heat.
6 Add the nutritional yeast, lemon juice, and liquid smoke.
7 Use an immersion blender to blend the soup until smooth (or mostly smooth with a few potato chunks—your call). Alternatively, you can transfer the soup in batches to a blender and carefully blend until smooth.
8 Add salt and pepper (if desired).
9 Serve topped with bacon crumbles and green onions (if desired).
10 Leftovers can keep in an airtight container in the fridge for 5 to 6 days.

Salt and black pepper are optional, along with adding quick bacon crumbles and chopped green onions.
