Creamy Turkey Chowder

Ingredients

2 cups Turkey Breast, Organic
, Potato
, Onion
1 cups Corn Kernels, Frozen
1/4 cups Cornstarch
2 teaspoons Parsley, dried
, large, Celery, finely diced
, Carrots, Raw
1 quarts Chicken Stock
1 1/2 cups Milk
1/4 cups Butter, Without Salt
2/3 teaspoons, ground Thyme, dried
0.25 tsp Salt
, ground Pepper

Steps

1 Cut up all the vegetables and set aside.
2 In a Dutch oven, melt butter over medium-high heat.
3 Add the onion, celery and carrot and saute, stirring frequently for about 5 minutes, or until the onions turn translucent.
4 Stir in the cornstarch and mix in until no lumps remain.
5 Add in the chicken stock, turn to heat up to high and bring to a boil, while stirring frequently.
6 Add in the potatoes, turkey, corn, parsley, and thyme.
7 Reduce heat to simmer and stir frequently for around 15 to 20 minutes, or until the potatoes are tender.
