Tunisian Tomatoes and Eggs with Spicey Peppers

Ingredients

3 large whole (3" dia) Tomatoes, red
4 large Egg
1 large Onion
, about , Green Pepper, finely diced
2 pepper Green Chili Peppers, hot
1 clove Garlic clove
1 tablespoon Virgin Olive Oil
2/3 teaspoons Salt
2/3 teaspoons, ground Pepper

Steps

1 Peel away outer skin of onion, then cut into thin half-moon slices. Peel tomatoes then cut each tomato into quarters. Cut green peppers into thin slices. Cut open chili peppers and remove seeds, then chop finely. Finely chop garlic clove.
2 Heat olive oil over large skillet, then add onion and stir until they're soft, but not quite brown.
3 Add the green pepper, chili pepper and garlic to skillet and stir regularly for about 15 minutes or until green pepper pieces lose their bright green appearance.
4 Turn heat down to medium, then add tomatoes to vegetable mix and allow to cook for another 10 minutes.
5 Mix in salt and pepper then separate mixture into 4 equal parts, making a crater in each one.
6 Break a whole egg into each crater, then cover skillet and cook for another 5 minutes or until eggs turn white.
