Artichoke Corn Pasta

Ingredients

Amount Ingredient
1/2 cups Penne Pasta, Whole Wheat
2 teaspoons Olive Oil
1/2 cups Artichoke Hearts
1/2 cups Corn, Canned, Drained Solids
1 dash Salt
1 dash Pepper

Steps

1 Boil pasta according to package directions.
2 While pasta is cooking, finely chop artichokes then set aside.
3 Drain water from pasta, then stir in 1 tsp. olive oil.
4 Heat 1 tsp. of olive oil in a skillet over med-high heat, then add the sweet corn and saute for 4–5 minutes.
5 Stir corn into pasta and mix thoroughly.
6 Transfer pasta and corn into a bowl, then top with artichoke hearts.
7 Enjoy!
