Chicken Casserole (Keto Style)

Ingredients

1 quarts Boneless Skinless Chicken Thighs
, Cauliflower, Raw
1/2 cups Cherry Tomatoes
1 cups Monterey Jack Cheese, shredded
1 leek Leeks, (bulb and lower leaf-portion), raw
3/4 cups Heavy Whipping Cream
1/2 cups Cream Cheese
1/4 cups Butter
1/4 cups Green Pesto Sauce
0.5 lemon yields Lemon juice
2/3 teaspoons Salt
2/3 teaspoons, ground Pepper

Steps

1 Preheat oven at 375 degrees.
2 Wash and rinse chicken thighs, then dice into bite sized pieces. Season with salt and pepper.
3 Heat a large skillet over medium heat and melt butter.
4 Add chicken and fry until cooked through.
5 Place cooked chicken into a casserole/baking dish.
6 In a small bowl, mix together whipping cream, cream cheese, pesto and lemon juice. Mixing with a hand blender will work best.
7 Pour cream mixture over chicken.
8 Chop leek finely and chop cauliflower into small florets.
9 Cut cherry tomatoes in half.
10 Top chicken with leek, cauliflower, tomatoes and cheese.
11 Place dish in oven, on the lower rack, and bake for around 40 minutes or until cooked through.
