Almond Wild Rice

Ingredients

1 cups Wild rice, raw
, Onion
1/2 cups Shiitake Mushrooms
1/2 cups Sliced Almonds, Toasted
1 tablespoon Garlic, Minced
2 teaspoons, ground Thyme, dried
1 teaspoons Olive Oil
2 cups Vegetable broth
1/2 cups Water

Steps

1 Preheat oven to 375 degrees.
2 Chop onion and slice mushrooms.
3 Heat a large skillet over medium heat, then add olive oil. At this time, heat broth and water in a small pot.
4 When oil is hot, pour in rice (uncooked), then stir in chopped onion, mushrooms, almonds, garlic and thyme.
5 Continue stirring for around 5 minutes, then pour rice mixture into a baking dish.
6 When broth begins boiling, pour broth over the rice, then spread rice mixture evenly in baking dish.
7 Cover dish and bake for 50-60 minutes.
