Curried Cauliflower Soup

3 cloves Garlic clove
1 quarts, 1 cups Vegetable Stock
1 3/4 cups Coconut Milk, canned
1 tablespoon Yellow Curry Paste, A Taste Of Thai

Steps

1 Preheat oven to 350 degrees F.
2 Cut cauliflower into small florets, chop onion, and half each clove of garlic.
3 Place chopped cauliflower, onion and garlic on a baking sheet, and bake for about 30 minutes or until golden brown.
4 In a large saucepan, combine vegetable stock, coconut milk, and curry paste and bring to a boil over high heat.
5 Add the roasted vegetables, reduce heat, cover and simmer for 15 minutes over low heat.
6 Puree soup in a blender until smooth.
7 Serve immediately.
