Chicken Pasta Salad

Ingredients

Amount Ingredient
1 piece Chicken Breast, raw
2 stalk Green Onions
0.125 tsp Ginger, Ground, Organic
2 cups Spiral Pasta, Organic
1/2 cups Mayonnaise, Fat Free
1 teaspoons Sherry, Cooking Wine
1/2 cups Water Chestnuts, Sliced
1 cups Snow Peas
1/4 cups Soy sauce, low sodium
, ground Pepper
1/4 cups Sliced Almonds, Toasted

Steps

1 In a small pot, bring 3 cups of water to a boil, then add spiral pasta and cook till tender.
2 Trim any remaining fat from chicken breast then rinse.
3 Place chicken in a toaster oven and roast for 20 minutes at 350 degrees.
4 In a small bowl, thoroughly mix together mayonnaise, soy sauce, sherry, ground ginger, and pepper.
5 Drain water from pasta then place pasta in a medium sized bowl.
6 Dice or shred chicken then add to pasta bowl.
7 Add snow peas, green onions, and water chestnuts, stir in dressing mix from step 3.
8 Refrigerate for at least 2 hours or overnight.
9 Sprinkle each serving with toasted almonds before serving.
