Carbonara Penne

Ingredients

Amount Ingredient
1/4 cups Parmesan Cheese, Shredded
1/4 cups Sour Cream
2 large Egg Yolk
1 tablespoon Butter
1/8 cups Lemon juice
3/4 cups Penne Pasta
1/2 cups Pancetta
2 large Scallions (includes tops and bulb)
1/2 cups Peas, canned

Steps

1 Place a large pot of water over high heat and bring to a boil. Scoop out and reserve ½ cup pasta cooking water, then drain. Zest lemon until you have 1 tsp zest, then cut into wedges.
2 While water is heating up, rinse all produce, trim and slice scallions thinly, keeping greens and whites separate.
3 When water comes to a boil, add penne pasta, bring heat down to medium and cook for 7-8 minutes until almost soft.
4 While pasta boils, separate egg yolks from whites then place in a large bowl. Add sour cream and 2 tbsp of Parmesan cheese to bowl with egg yolks and mix vigorously with a fork.
5 Add peas to pasta and continue cooking for 2 more minutes or until pasta is softened.
6 During this process, heat a pan over medium-high heat. Add pancetta and cook for 3-5 minutes. Add scallion whites and toss until softened and pancetta is crisp for about 1-2 more minutes.
7 Remove pancetta, scallion mix from pan and place on a paper towel lined plate.
8 Drain pasta and peas into a colander, transfer it to a bowl and immediately stir in egg, sour cream, cheese mix, followed by pancetta, half the scallion greens, and 1 tbsp of butter. Toss and mix thoroughly.
9 Season with salt and pepper, with a touch of lemon juice to desired taste.
10 Divide onto two separate plates. Sprinkle with remaining Parmesan and scallion greens.
